goats cheese, spinach and sundried tomato frittata

Ingredients 5 Number of people

olive oil spray

1 red onion, finely chopped

half a jar of sundried tomato's, in oil, oil drained

80g spinach leaves

110g goats cheese, crumbled

6 hen eggs or 2 goose eggs

250ml Greek yogurt  

few sprigs of fresh oregano, finely chopped

pepper to taste.

 

Directions

spray the bottom of your slow cooker lightly with olive oil

prepare then layer your vegetables and cheese making sure they are evenly combined

beat the eggs and yogurt together and add the oregano and pepper

pour mixture over the vegetables and cheese making sure the whole thing is covered.

put on high and cook for 1-2 hours

once cooked remove pot from the base run a knife around the edge put a plate over the top and turn the two upside down so the frittata drops onto the plate   

Notes/Tips

it can be done in the oven but it won't take as long so keep an eye on it.
