Red Lentil, Ham and Sweet Potato Soup

Ingredients 4 Number of people

1/2 lb Previously Boiled Ham

2 Pints Skimmed Stock from Ham

1 Cup Red Lentils Stepped Over Night

1 Large Sweet Potato

1 Onion

2 Carrots

1 Teaspoon Chopped Ginger

1 Teaspoon Dried Coriander powder

1 Teaspoon Black Pepper

 

Directions

Peel and shred the sweet potato and carrots, unless you like a chunky soup then chop to desired thickness and add to stock.  Add rinsed lentils, chopped onion, ginger, coriander and black pepper; bring to the boil and shimmer for 2 hours stirring occasionally.  Add chopped boiled ham and cook for a further 30 minutes.  Serve with wheaten bread and butter, if on a diet have an little extra soup and no bread.

Notes/Tips

I like a spicy, warming soup if you don't reduce the seasoning to 1/2 teaspoons.  Should not need to add salt, as ham stock should be salty enough, be careful if using gammon stock, as it can be overly salty, taste the fluid and reduce with cold water to desired taste.

Sounds lovely for me - I love sweet potato and soups in general and after having a gastric bypass need a lot of protein, will give this a try at the weekend - I shop on friday so will be cooking it on saturday - unless it's scorching hot  but looking out today, I'm not expecting it to be - will let you know how it goes, thanks.
