Zucchini Breakfast Muffins

Ingredients 6 Number of people

* 1 2/3 cups of whole-wheat flour

   - to make it gluten free use non gluten flour

* 1/2 cup of cane sugar or 1/3 cup of stevia

* 1 tsp of ground cinnamon

* 1/4 tsp of salt

* 1 1/4 tsp of Baking Powder

* 1/2 tsp of Baking Soda

* 1 1/3 cups of shredded zuchini

* 1/2 cup of fat-free milk or soja milk

* 2 tbsp of canola oil

* 2 tbsp of honey

* 1 large egg

Directions

1. Mix the flour with the baking soda and the baking powder and let it rest. 

2. Mix all the rest of the ingredients on a bowl till it is all blended.

3. Add the mix to the flour until you get a dough. 

4. You can either make it like bread if you don't have muffin cups or spread it on 12 different muffin cups

5. Bake at 200°C for 15 minutes
