Tasty Curry

Ingredients 4 Number of people

1 large Onion    

2" Fresh Ginger (3 tsp Dried)   

1 Head Garlic     

350 g Bavette Steak,/Brazing Steak. Cubed. 

1 Cup Frozen Peas     

1 Cup Frozen Sweet Corn.       

1/2 Half Cup Dried Mixed Fruit.   

1 tbs Tomato Puree.             

1 Litre Stock. (Veg, Beef, Chicken.)             

1 tsp Ground Cumin         

1 tsp Ground Garam Masala     

1 tsp Ground Turmeric 

1/2 tsp Chilli Flakes or to taste.   

1 tbs Rapeseed or Olive or Veg Oil                 

1-2 tsp Salt

Directions

Finely chop the onion, ginger and garlic. Pre-heat a large sauté pan and add onion, garlic, ginger and salt. Gently fry for 2 minutes.  Add cubed meat, tomato puree and spices. Continue to fry for a further 2 minutes.

Add stock, mixed fruit, peas and sweet corn and gently simmer for 30 minutes, adding extra stock if needed. (Add approximately 15 minutes for the rice).

In the meantime prepare the brown basmati rice. The ratio is 1 cup of rice to 2 cups of water, bring to boil. Turn the heat to LOW and simmer until all water has been absorbed and the rice is soft and fluffy.

Serve with mango chutney.

Notes/Tips

Well worth making that little extra effort. 

For 'That little extra' add frozen mixed peppers.
