Dairy-free American-style Pancakes

Ingredients 2 Number of people

115g self raising flour

1/2 tablespoon baking powder

1 teaspoon white sugar

1 pinch salt

150ml non-dairy milk (almond, oat, soya, rice)

15 ml sunflower oil

1 large egg, beaten

1 teaspoon rapeseed oil

 

Directions

1. In a large bowl, mix all the dry ingredients: flour, baking powder, sugar and salt.

2. Make a well in the dry ingredients, crack in the egg and pour in the milk and sunflower oil.

3. Mix the dry and wet ingredients. Do not over mix!

3. Heat the rapeseed oil in a frying pan. When the pan is hot, spoon about 3 tablespoons of batter into the pan. When the bubbles appear on the surface of the pancake it's ready to flip. Cook on the second side until golden. 

4. Repeat until the batter is gone!

Serve warm with maple syrup, golden syrup, chocolate sauce, strawberry jam, what ever you like!
